  • 14 oz Extra-firm tofu
  • 3 tbsp Olive oil
  • 2 tbsp Soy sauce
  • 1.5 tbsp Lemon juice
  • 1 tsp Garlic powder
  • 1 tsp Dried oregano
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Black pepper
  • 4 pieces Whole wheat pita bread
  • 1 large Cucumber
  • 8 oz Cherry tomatoes
  • 0.5 medium Red onion
  • 4 leaves Lettuce
  • 0.5 cup Tzatziki sauce

Directions

Step 1

Start by pressing the extra-firm tofu to remove excess water. Wrap it in a clean kitchen towel or paper towels, place it under a heavy object, and let it sit for at least 10 minutes.

Step 2

While the tofu is being pressed, prepare the marinade. In a small bowl, whisk together olive oil, soy sauce, lemon juice, garlic powder, dried oregano, smoked paprika, and black pepper.

Once pressed, slice the tofu into strips about 1/2 inch thick.

Place the tofu strips in a shallow dish and pour the marinade over them. Ensure each piece is thoroughly coated. Let them marinate for at least 15 minutes, turning halfway through.

While the tofu is marinating, slice the cucumber and red onion thinly, halve the cherry tomatoes, and wash the lettuce leaves. Set aside.
