  • 200 grams Vegetarian chicken strips
  • 4 pieces Whole wheat tortillas

  • 100 grams Arugula
  • 100 grams Hummus
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Cumin powder
  • 1 tablespoon Lemon juice

Directions

Step 1

Start by preparing the vegetables. Slice the red bell pepper and zucchini into thin strips, and thinly slice the red onion.

Step 2

In a large bowl, combine the sliced red bell pepper, zucchini, and red onion. Add olive oil, salt, black pepper, and cumin powder. Toss everything together until the vegetables are well coated.

Step 3

Preheat a grill pan over medium heat. Add the seasoned vegetables to the pan and grill for about 5-7 minutes, or until they are slightly softened and have grill marks. Remove the vegetables from the pan and set aside.
