Ingredients

  • 4 medium green tomatoes
  • 1 small yellow onion
  • 1 medium jalapeño pepper
  • 2 cloves garlic cloves
  • 0.5 cup cilantro leaves
  • 2 tablespoons lime juice
  • 1 tablespoon extra virgin olive oil
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the green tomatoes, jalapeño pepper, and cilantro under cold water and pat them dry.

Step 2

Roughly chop the green tomatoes into small chunks and set aside.

Step 3

Peel the yellow onion and garlic cloves. Slice the jalapeño in half, remove the seeds and membrane for a milder salsa, or leave them in for extra heat.

Step 4

Heat a skillet over medium heat and add the olive oil. Once hot, add the garlic cloves, onion, and jalapeño pepper. Sauté for 3-5 minutes, stirring occasionally, until they soften and develop a light char for added flavor.

Step 5

In a food processor or blender, combine the green tomatoes, sautéed mixture, cilantro leaves, lime juice, ground cumin, salt, and black pepper.

Step 6

Pulse the mixture until you achieve your desired consistency: chunky or smooth as per your preference. Taste and adjust seasoning if needed.

Step 7

Transfer the salsa to a serving bowl and let it rest for 10 minutes to allow flavors to meld together.

Step 8

Serve immediately with tortilla chips, or use it as a topping for tacos, burritos, or grilled vegetables. Store leftovers in an airtight container in the refrigerator for up to 5 days.
