  • 2 whole Zucchini
  • 1 large Red onions
  • 250 g Halloumi cheese
  • 200 g Cherry tomatoes
  • 60 ml Olive oil
  • 30 ml Lemon juice
  • 2 tsp Dried oregano
  • 2 whole Garlic cloves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 8 whole Wooden skewers
  • 250 g Greek yogurt
  • 0.5 whole Cucumber
  • 1 tbsp Fresh dill

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.

Step 2

Cut the red bell peppers, zucchini, and halloumi cheese into 1-inch cubes. Slice the red onion into 1-inch wedges.

Step 3

In a large bowl, combine olive oil, lemon juice, dried oregano, minced garlic cloves, salt, and black pepper to create the marinade.

Add the bell peppers, zucchini, red onion, cherry tomatoes, and halloumi cheese to the marinade. Toss well to coat all the ingredients. Let it marinate for at least 15 minutes.
