Ingredients

  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoons dried thyme
  • 0.5 teaspoons paprika
  • 0.25 teaspoons salt
  • 0.25 teaspoons ground black pepper

Directions

Step 1

Heat a medium saucepan over medium heat.

Step 2

Melt the butter in the saucepan, then whisk in the flour to form a smooth paste. This mixture is known as a roux.

Step 3

Cook the roux for 2–3 minutes, stirring constantly, to remove the raw flour taste. It should turn lightly golden in color.

Step 4

Slowly pour in the vegetable broth, one cup at a time, whisking constantly to prevent lumps from forming.

Step 5

Bring the mixture to a gentle simmer while continuing to whisk until it thickens, about 5–7 minutes.

Step 6

Stir in the soy sauce, onion powder, garlic powder, dried thyme, paprika, salt, and black pepper. Mix well to combine all the flavors.

Step 7

Taste the gravy and adjust the seasoning as needed, adding more salt or pepper if desired.

Step 8

Remove the gravy from heat and strain through a fine mesh sieve if a smoother consistency is preferred.

Step 9

Serve warm over your favorite dishes, such as mashed potatoes, roasted vegetables, or stuffing.
