  • 1 large Gourd (such as bottle gourd or lauki)
  • 300 grams Vegetarian beef substitute
  • 2 tablespoons Coconut oil
  • 1 medium Onion
  • 3 Garlic cloves
  • 1 inch Ginger
  • 2 medium Tomato
  • 400 ml Coconut milk
  • 200 ml Water
  • 2 tablespoons Curry powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh coriander leaves
  • 1 tablespoon Lemon juice

Directions

Step 1

Peel and dice the gourd into 1-inch cubes. Set aside.

Finely chop the onion, garlic, and ginger. Dice the tomatoes.

Heat coconut oil in a large saucepan over medium heat.

Add chopped onion and sauté until translucent, about 5 minutes.
