Ingredients

  • 8 ounces King oyster mushrooms
  • 2 tablespoons Olive oil
  • 4 units Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice
  • 1 tablespoon Soy sauce
  • 2 tablespoons Vegetable broth or water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Clean the king oyster mushrooms and slice them into 'prawn-like' shapes: cut the mushrooms into discs about 1/2-inch thick and then slice around the edges to shape into pseudo prawn tails.

Step 2

In a medium bowl, combine the sliced mushrooms, soy sauce, and 1 tablespoon of the olive oil. Toss until the mushrooms are well coated and allow them to marinate for 10 minutes.

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.

Add the minced garlic and sauté for about 1 minute, until fragrant, being careful not to burn the garlic.
