Ingredients

  • 2 cups brown rice
  • 4 cups water
  • 3 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium carrot, diced
  • 2 bell peppers (red, yellow, or green), chopped
  • 1 cup frozen peas and corn mix
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • 0 salt, to taste
  • 0 black pepper, to taste
  • 1 tablespoon sesame seeds, for garnish

Directions

Step 1

Rinse the brown rice thoroughly under cold water. In a medium saucepan, bring 4 cups of water to a boil, add the brown rice, reduce the heat to low, cover, and simmer for about 30-35 minutes until the rice is tender and water is absorbed. Fluff with a fork and set aside.

Step 2

In a large non-stick pan or wok, heat 2 tablespoons of olive oil over medium-high heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

Step 3

Add the diced carrot and stir-fry for about 3 minutes until slightly softened.

Step 4

Add the chopped bell peppers and the peas and corn mix to the pan, and cook for another 5 minutes, stirring frequently.

Step 5

Push the vegetables to one side of the pan and add the remaining 1 tablespoon of olive oil to the other side. Increase the heat to high and add the cooked brown rice.

Step 6

Drizzle the soy sauce and sesame oil over the rice. Stir everything together to combine the vegetables and rice, and cook for an additional 5 minutes, allowing the rice to slightly crisp.

Step 7

Season with salt and black pepper to taste, then add the sliced green onions. Toss everything together one last time.

Step 8

Transfer to a serving dish and sprinkle the top with sesame seeds as a garnish. Serve hot.
