  • 1 cup Baby spinach

  • 0.25 cup Red bell pepper, diced
  • 2 stalks Green onions, thinly sliced
  • 0.25 cup Feta cheese, crumbled

Directions

Step 1

In a large mixing bowl, whisk the egg whites with a pinch of salt and pepper until they are frothy and little bubbles start to form.

Step 2

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the baby spinach, cherry tomatoes, and red bell pepper. Sauté for 2-3 minutes until the vegetables start to soften. Add the green onions and cook for an additional 1 minute. Transfer the cooked vegetables to a plate.
