  • 1 whole Yellow bell pepper

  • 1 head Romaine lettuce
  • 15 ounces Canned black beans
  • 1 cup Cherry tomatoes
  • 1 large Avocado
  • 0.25 cup Fresh cilantro
  • 1 whole Lime
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Cotija cheese (optional)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Slice the red, yellow, and green bell peppers into thin strips. Peel and slice the red onion into thin wedges.

Step 3

Place the sliced peppers and red onion on a baking sheet. Drizzle with olive oil and sprinkle with fajita seasoning. Toss to ensure even coating.

Roast the vegetables in the preheated oven for about 15 minutes or until they are tender and slightly charred.
