  • 250 g All-purpose flour
  • 125 ml Water
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 200 g Sour cream (or crème fraîche)
  • 100 g Soft goat cheese
  • 2 Onions
  • 1 tbsp Olive oil (for onions)
  • 0.25 tsp Salt (for onions)
  • 0.25 tsp Ground black pepper
  • 3 tbsp Fresh chives
  • 1 tbsp Fresh thyme leaves

Directions

Step 1

Preheat your oven to 230°C (450°F) and place a baking stone or an inverted baking sheet inside to heat up.

Step 2

In a large mixing bowl, combine the flour and salt. Make a well in the center and add the water and olive oil. Mix until a rough dough forms.

Step 3

Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. Form into a ball and let rest for 10 minutes.

While the dough is resting, prepare the onions by slicing them thinly.

In a pan over medium heat, add 1 tablespoon of olive oil and add the sliced onions, cooking until caramelized, about 10-15 minutes. Season with salt and set aside.
