Ingredients

  • 12 ounces Fettuccine pasta
  • 2 tablespoons Olive oil

  • 1 medium Carrot, finely chopped
  • 1 medium Celery stalk, finely chopped
  • 12 ounces Plant-based ground 'meat'
  • 28 ounces Canned crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 cup Red wine (optional)
  • 0.25 cup Fresh basil leaves, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet over medium heat, heat the olive oil. Add the chopped onion and cook for about 3 minutes until it becomes translucent.

Stir in the minced garlic, chopped carrot, and chopped celery. Cook for an additional 5 minutes until the vegetables start to soften.
