  • 400 grams melinjo nuts
  • 500 ml vegetable oil
  • 1 teaspoon salt
  • 1000 ml water

Directions

Step 1

Begin by washing the melinjo nuts thoroughly under running water to remove any dust and debris.

Step 2

In a large pot, bring the 1000 ml of water to a boil. Add the melinjo nuts and allow them to boil for about 10 minutes, or until they become tender. Drain and let them cool slightly.

Step 3

Once cool enough to handle, peel the outer skin of the melinjo nuts. Use a mortar and pestle or a sturdy surface to flatten each nut into thin, round chips.

Step 4

Spread the flattened melinjo chips on a clean cloth or kitchen towel. Let them dry completely; this may take a few hours under the sun or you can use an oven at the lowest setting to speed up the drying process.

Step 5

Heat the vegetable oil in a deep frying pan over medium heat. Once the oil is hot enough for frying, test by dropping a small piece of emping – if it sizzles, the oil is ready.

Step 6

Carefully add a few emping pieces into the hot oil, making sure not to overcrowd the pan. Fry until they turn golden brown and crispy, approximately 1-2 minutes per batch.

Using a slotted spoon, remove the emping from the oil and place them onto a plate lined with paper towels to drain excess oil.
