Ingredients

  • 4 cups cooked jasmine rice
  • 3 pieces large eggs
  • 1 cup frozen peas
  • 1 large carrot, diced
  • 1 medium red bell pepper, diced
  • 3 pieces green onions, sliced
  • 2 cloves garlic cloves, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Prepare all your ingredients: dice the carrot and red bell pepper, and slice the green onions. Mince the garlic cloves.

Step 2

In a small bowl, beat the eggs with a pinch of salt and a little black pepper.

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat.

Add the beaten eggs and stir gently until they are just cooked through. Remove the eggs from the pan and set aside.
