Ingredients

  • 6 pieces large flour tortillas
  • 6 pieces corn tostadas
  • 1.5 cups canned refried beans
  • 0.75 cup sour cream
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1.5 cups shredded cheddar cheese
  • 1 pieces avocado, sliced
  • 1 tablespoon taco seasoning
  • 2 tablespoons olive oil

Directions

Step 1

Step 1: Heat the refried beans in a saucepan over medium heat. Stir in the taco seasoning and mix well. Keep warm.

Step 2

Step 2: Take one large flour tortilla and spread about 1/4 cup of the refried bean mixture in the center.

Step 3

Step 3: Place a corn tostada on top of the beans. Spread about 2 tablespoons of sour cream over the tostada.

Step 4

Step 4: Layer 1/4 cup of shredded lettuce, 2 tablespoons diced tomatoes, a few slices of avocado, and 1/4 cup of shredded cheddar cheese on top of the sour cream.

Step 5

Step 5: Carefully fold the edges of the flour tortilla over the center, pressing them down to seal (you may need an extra tortilla piece to fill any gaps). Repeat the wrapping process for all Crunchwraps.

Step 6

Step 6: Heat a tablespoon of olive oil in a large non-stick skillet over medium heat.

Step 7

Step 7: Place the folded side down of the Crunchwrap into the skillet. Cook for about 2-3 minutes on each side or until golden and crispy. Repeat with remaining wraps, adding more oil if necessary.

Step 8

Step 8: Serve hot. Optionally, serve with extra sour cream or salsa on the side.
