Ingredients

  • 1 large loaf baguette
  • 4 tablespoons extra virgin olive oil
  • 2 large garlic cloves
  • 200 grams cherry tomatoes
  • 150 grams cremini mushrooms
  • 1 tablespoon balsamic vinegar
  • 10 leaves fresh basil leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 50 grams parmesan cheese

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Slice the baguette into 1/2 inch thick rounds. You should get approximately 16 slices.

Step 3

Arrange the baguette slices on a baking sheet. Brush each slice with olive oil using half of the olive oil (2 tablespoons).

Step 4

Peel one garlic clove and slice it in half. Rub the cut side of the garlic over each oiled baguette slice.

Step 5

Place the baking sheet in the oven and bake the baguette slices for 6-8 minutes until they are golden and crispy.

While the crostini are baking, finely chop the remaining garlic clove.

Quarter the cherry tomatoes and thinly slice the mushrooms.

In a medium bowl, mix the chopped garlic, tomatoes, and mushrooms. Add balsamic vinegar, the remaining olive oil (2 tablespoons), salt, and black pepper. Stir to combine the mixture.
