Ingredients

  • 4 pieces Croissants
  • 8 slices Vegan or vegetarian ham slices
  • 8 slices Vegan or vegetarian cheese slices
  • 2 tablespoons Butter
  • 2 tablespoons Dijon mustard
  • 1 cup Arugula
  • 1 medium Tomato
  • 0 to taste Salt and pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Slice each croissant horizontally in half to open them up for the filling.

Step 3

Spread about 1/2 tablespoon of butter on the inside of each half of the croissants.

Step 4

Spread a thin layer of Dijon mustard on the bottom half of each croissant.

Step 5

Place two slices of vegan or vegetarian ham on top of the mustard on each croissant.

Step 6

Add two slices of vegan or vegetarian cheese on top of the ham.

Step 7

Slice the tomato into thin rounds and place 2-3 slices on top of the cheese on each croissant.

Step 8

Season the tomato slices with a pinch of salt and pepper.

Step 9

Place a small handful of arugula on the tomatoes for added freshness.

Cover with the top half of the croissant, gently pressing down.

Step 11

Place the assembled croissants on a baking sheet and bake in the preheated oven for about 5-7 minutes, or until the cheese is nicely melted and the croissants are lightly toasted.
