Ingredients

  • 8 pieces Corn tortillas
  • 120 ml Olive oil
  • 400 g Cooked black beans
  • 200 g Corn kernels (fresh or canned)
  • 150 g Cherry tomatoes
  • 0.5 piece Red onion
  • 20 g Cilantro
  • 1 large Avocado
  • 1 medium Lime
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 100 ml Sour cream

Directions

Step 1

1. Heat the olive oil in a large, heavy-bottom skillet over medium-high heat. Line a plate with paper towels.

2. Fry the corn tortillas one at a time in the hot oil for about 1 minute on each side, or until they are golden brown and crispy. Remove from the oil and place on the paper towels to drain excess oil. Repeat with all tortillas.
