Ingredients

  • 6 slices vegetarian bacon
  • 2 tablespoons olive oil
  • 5 cups mixed salad greens
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 0.5 small red onion
  • 1 large avocado
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a skillet over medium heat.

Step 2

Add the vegetarian bacon slices and cook until crispy, about 4-5 minutes per side. Remove and place them on a paper towel-lined plate to cool.

Step 3

While the bacon is cooking, halve the cherry tomatoes, slice the cucumber into thin rounds, and thinly slice the red onion.

Step 4

Dice the avocado just before assembling the salad to prevent browning.

Step 5

In a small bowl, whisk together 3 tablespoons of balsamic vinegar, 1 tablespoon of olive oil, 1 teaspoon of Dijon mustard, 1 teaspoon of honey, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper to make the vinaigrette.

Step 6

In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber slices, red onion slices, and diced avocado.

Step 7

Break the cooled vegetarian bacon into bite-size pieces and add them to the salad.

Step 8

Pour the vinaigrette over the salad and gently toss until everything is well coated.

Step 9

Serve immediately and enjoy your crispy vegetarian bacon salad.
