Ingredients

  • 2 cups cottage cheese
  • 1 cup brown rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 cloves garlic cloves
  • 1 medium bell pepper
  • 1 cup broccoli florets
  • 1 medium carrot
  • 1 cup frozen peas
  • 2 tablespoons parsley
  • 3 large eggs
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a saucepan, bring 2 cups of water to a boil. Add 1 cup of brown rice, lower the heat to a simmer, cover, and cook for 40-45 minutes until the rice is tender. Once cooked, drain any excess water and set aside.

Step 3

While the rice is cooking, heat 2 tablespoons of olive oil in a skillet over medium heat.

Step 4

Dice 1 medium onion and mince 2 garlic cloves. Add to the skillet and sauté until the onion is translucent, about 5 minutes.

Chop 1 medium bell pepper and add it to the skillet. Sauté for another 3 minutes.

Add 1 cup of broccoli florets, 1 medium chopped carrot, and 1 cup of frozen peas to the skillet. Cook for 5 minutes more, stirring occasionally, until the vegetables are tender. Remove from heat.

In a large bowl, whisk together 3 large eggs, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.

Stir in 2 cups of cottage cheese and 1 cup of shredded cheddar cheese.

Add the cooked vegetables and brown rice to the egg mixture and stir until well combined.

Chop 2 tablespoons of fresh parsley and fold it into the mixture.
