Ingredients

  • 400 grams canned chickpeas
  • 150 grams plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons mango chutney
  • 1 teaspoon curry powder
  • 0.5 teaspoon ground turmeric
  • 1 tablespoon lemon juice
  • 30 grams sliced almonds
  • 1 tablespoon condensed milk
  • 2 tablespoons fresh coriander
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Drain and rinse the canned chickpeas thoroughly under cold water and set aside.

Step 2

In a large mixing bowl, combine the Greek yogurt, mayonnaise, mango chutney, curry powder, turmeric, lemon juice, condensed milk, salt, and pepper. Whisk until smooth and evenly mixed.

Step 3

Gently fold in the chickpeas until they are well coated with the dressing.

Step 4

Toast the sliced almonds in a dry skillet over medium heat for about 3-4 minutes, stirring frequently, until golden brown and fragrant. Let them cool slightly.

Step 5

Add the toasted almonds to the chickpea mixture, reserving a few for garnish.

Step 6

Chop the fresh coriander and add it to the mixture, stirring to combine. Save a little coriander for garnishing as well.

Step 7

Taste and adjust seasoning if necessary. You may add more lemon juice, salt, or pepper according to your taste preference.

Step 8

Serve the Vegetarian Coronation Chickpea on a bed of greens, as a sandwich filling, or as a side dish. Garnish with the reserved almonds and coriander before serving.
