Ingredients

  • 6 large eggs
  • 0.5 cup cottage cheese
  • 0.5 cup grated cheddar cheese
  • 0.5 cup grated Monterey Jack cheese
  • 1 cup fresh spinach
  • 0.5 cup red bell pepper
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.125 teaspoon nutmeg
  • 1 teaspoon olive oil

Directions

Step 1

Preheat your oven to 300°F (150°C).

Lightly grease a 12-cup muffin tin with olive oil.

In a blender, combine the eggs, cottage cheese, salt, pepper, and nutmeg. Blend until the mixture is smooth and well combined.
