Ingredients

  • 2 sheets Puff pastry sheets
  • 200 grams Button mushrooms
  • 1 medium Shallot
  • 2 cloves Garlic cloves
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 100 milliliters Heavy cream
  • 1 teaspoon Thyme leaves, fresh
  • 0.25 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons All-purpose flour, for dusting

Directions

Step 1

Preheat the oven to 200°C (390°F).

Step 2

Lightly dust your work surface with flour. Roll out the puff pastry sheets to about 3mm (1/8 inch) thickness.

Step 3

Using a round cookie cutter (about 7cm or 3 inches in diameter), cut out 16 circles from the pastry sheets. For 8 of these circles, cut a smaller circle within to create a ring.

Step 4

Place the whole circles on a baking sheet lined with parchment paper. Brush the edges with some water and place the rings on top to form a border.

Step 5

Prick the base with a fork a few times to prevent it from puffing up excessively.

Step 6

Bake in the preheated oven for 12-15 minutes or until golden and puffed up. Set aside to cool.

Step 7

Finely chop the shallot and garlic cloves. Clean and slice the mushrooms.

Heat butter and olive oil in a pan over medium heat. Add the chopped shallots and sauté until translucent, about 2-3 minutes.

Add garlic and mushrooms to the pan and sauté until the mushrooms are soft and any moisture has evaporated, about 5 minutes.

Step 10

Stir in the heavy cream, thyme, nutmeg, salt, and black pepper. Cook for an additional 2-3 minutes until the mixture is well combined and slightly thickened.

Step 11

Spoon the mushroom filling into the center of each puff pastry shell.

Step 12
