Ingredients

  • 4 pieces large flour tortillas
  • 1 cup cooked white or brown rice
  • 1 cup cooked black beans
  • 1 medium red bell pepper, diced
  • 0.5 medium onion, diced
  • 0.5 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 medium avocado, sliced
  • 0.5 cup sour cream
  • 0.5 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and red bell pepper to the skillet and sauté for 5 minutes until the onions are translucent.

Step 3

Add the cooked rice, black beans, corn, ground cumin, chili powder, salt, and black pepper to the skillet. Stir well to combine.

Step 4

Cook the mixture for 5 more minutes, stirring occasionally, until everything is heated through.

Step 5

Warm the flour tortillas in a dry skillet or microwave, about 30 seconds each, until they are pliable.

Step 6

Place one tortilla flat on a plate. Add about 0.25 cup of the rice and bean mixture to the center of the tortilla.

Step 7

Top the mixture with shredded cheddar cheese, sliced avocado, a dollop of sour cream, and a spoonful of salsa.

Step 8

Fold the sides of the tortilla over the filling, then roll from the bottom to the top to form a burrito.

Step 9

Repeat the filling and folding process with the remaining tortillas and ingredients.

Step 10

Serve the burritos warm, with additional salsa and sour cream on the side if desired.
