Ingredients

  • 4 large bell peppers
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 medium zucchini
  • 1 medium carrot
  • 1.5 cups cooked rice
  • 1 cup canned diced tomatoes
  • 1 cup black beans
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Slice the tops off the bell peppers, remove the seeds and membranes, and set aside.

Step 3

Finely chop the onion, garlic, zucchini, and carrot.

In a large skillet over medium heat, add the olive oil.
