Ingredients

  • 4 tablespoons unsalted butter
  • 1 large yellow onion, chopped
  • 2 celery stalks, chopped
  • 1 medium carrot, peeled and diced
  • 2 garlic cloves, minced
  • 8 ounces button mushrooms, sliced
  • 2 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 cups cubed stale bread
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons olive oil

Directions

Step 1

Melt the butter in a large pot over medium heat. Once melted, add the chopped onion, celery, and carrot. Sauté for about 5 minutes until the vegetables are soft and the onion is translucent.

Step 2

Add the minced garlic and sliced mushrooms to the pot. Cook for an additional 5 minutes, stirring occasionally, until the mushrooms have released their moisture and are browned.

Step 3

Pour the vegetable broth into the pot along with the thyme, sage, rosemary, salt, and black pepper. Stir to combine and bring the mixture to a simmer.

Step 4

Add the cubed stale bread to the pot and stir until the bread cubes are evenly coated with the vegetable mixture. Cover the pot and cook for another 10 minutes over low heat, stirring occasionally to prevent sticking.

Step 5

Once the bread has absorbed most of the liquid and is tender, turn off the heat. Stir in the chopped fresh parsley and olive oil.

Step 6

Serve the stuffing warm as a side dish, garnished with additional parsley if desired.
