Ingredients

  • 1 piece pre-made pie crust
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen chopped spinach, thawed and drained
  • 1 cup button mushrooms, sliced
  • 4 large eggs
  • 1 cup heavy cream
  • 0.5 cup milk
  • 1 cup grated Gruyère cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 0.25 teaspoon nutmeg, grated

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the pre-made pie crust into a 9-inch pie plate, pressing it firmly into the plate, and trim any excess edges.

Step 3

In a skillet over medium heat, add the olive oil. Once hot, sauté the onion for 3-4 minutes until it becomes translucent.

Step 4

Add the minced garlic and cook for an additional minute.

Step 5

Add the mushrooms and cook until they are tender and most of their moisture has evaporated, about 5 minutes.

Step 6

Stir in the thawed and drained spinach, cooking for an additional 2 minutes. Remove from heat and set aside.

Step 7

In a large mixing bowl, whisk together the eggs, heavy cream, and milk until well combined.

Step 8

Stir in the Gruyère cheese, salt, black pepper, and nutmeg into the egg mixture.

Step 9

Add the sautéed vegetable mixture to the pie crust, spreading it evenly.

Step 10

Pour the egg and cheese mixture over the vegetables in the pie crust.

Step 11

Place the quiche in the preheated oven and bake for 40-50 minutes, or until the center is set and the top is golden brown.

Step 12

Remove the quiche from the oven and let it cool for a few minutes before slicing and serving.
