Ingredients

  • 1 medium Eggplant
  • 3 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon Soy sauce
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Honey or maple syrup
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Black pepper
  • 1 cup Arugula
  • 4 slices Fresh mozzarella cheese
  • 1 large, sliced Tomato
  • 4 tablespoons Basil pesto

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Slice the eggplant into thin, lengthwise slices, about 1/8 inch thick.

Step 3

In a bowl, mix olive oil, balsamic vinegar, soy sauce, smoked paprika, honey or maple syrup, garlic powder, and black pepper.
