In a large bowl, combine shredded cabbage, grated carrot, chopped shiitake mushrooms, crumbled tofu, and chopped green onions.
Add the soy sauce, sesame oil, grated ginger, minced garlic, and cornstarch to the vegetable mixture. Season with salt and black pepper.
Mix well until all ingredients are fully incorporated.
