Ingredients

  • 2 plant-based burger patties
  • 4 slices Swiss cheese slices
  • 4 slices rye bread
  • 1 medium yellow onion
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons butter
  • 2 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons olive oil

Directions

Step 1

Peel and thinly slice the yellow onion.

Step 2

In a skillet, heat olive oil over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring occasionally, until the onions are soft and caramelized, about 15 minutes. Remove the onions from the skillet and set aside.

Step 3

While the onions are cooking, mix together mayonnaise, ketchup, and Worcestershire sauce in a small bowl to make the sauce. Set aside.

Step 4

In the same skillet used to caramelize the onions, add the plant-based burger patties and cook according to package instructions, usually around 3-4 minutes per side, until browned and heated through. Remove patties from the skillet.

Spread butter evenly on one side of each slice of rye bread.

To assemble the melts, place one slice of rye bread butter-side down. Spread a layer of the sauce on the side facing up.

Place one cooked patty on top of the sauce, followed by the caramelized onions and two slices of Swiss cheese.

Top with another slice of rye bread, butter-side up.

Wipe the skillet clean and heat it over medium heat. Carefully add the assembled sandwich to the skillet and grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

Remove the patty melt from the skillet, cut in half, and serve immediately. Repeat with the second sandwich.
