Soak the rice noodles according to the package instructions until softened, then drain and set aside.
Press the tofu to remove excess moisture and cut into 1-inch cubes.
In a large skillet over medium-high heat, add 1 tablespoon of vegetable oil and sauté the tofu until golden brown on all sides, about 5-7 minutes. Remove from the pan and set aside.
