  • 150 grams brown rice
  • 100 grams bread crumbs
  • 1 medium onion
  • 2 large garlic cloves
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 large egg
  • 2 tablespoons fresh parsley

Directions

Step 1

Begin by cooking the brown rice according to the package instructions; this usually takes about 20 minutes. Allow it to cool.

Step 2

While the rice is cooking, drain and rinse the black beans thoroughly. Mash them in a large bowl using a fork or potato masher until they form a paste with some chunks remaining for texture.

Step 3

Finely dice the onion and mince the garlic cloves.

Step 4

Heat one tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté until they become translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes. Remove from heat and let it cool slightly.
