Ingredients

  • 2 tablespoons olive oil
  • 2 medium, finely chopped shallots
  • 3 large, minced garlic cloves
  • 250 grams, sliced cremini mushrooms
  • 120 milliliters Marsala wine
  • 240 milliliters vegetable broth
  • 1 tablespoon soy sauce
  • 2 tablespoons unsalted butter
  • 120 milliliters heavy cream
  • 1 teaspoon, chopped fresh thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the finely chopped shallots and sauté for about 3-4 minutes, or until soft and translucent.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the sliced cremini mushrooms to the skillet and sauté for about 5-7 minutes, or until the mushrooms are golden brown and have released their moisture.

Step 5

Pour in the Marsala wine and bring the mixture to a simmer. Cook for about 5 minutes, allowing the alcohol to evaporate and the flavors to meld.

Step 6

Add the vegetable broth and soy sauce to the skillet, and bring the mixture back to a simmer.

Step 7

Reduce the heat to low, stir in the unsalted butter, and let it melt into the sauce.

Step 8

Slowly add the heavy cream, stirring continuously to blend well.

Step 9

Sprinkle the chopped fresh thyme, salt, and black pepper into the sauce. Stir to combine.

Step 10

Continue to simmer the sauce on low heat for an additional 10 minutes to thicken and develop the flavors.

Step 11

Adjust seasoning as needed with additional salt and pepper to taste.

Step 12

Serve the Vegetarian Classic Marsala Sauce over pasta, rice, or as a topping for roasted vegetables.
