Ingredients

  • 1 pound Pizza dough
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 cup Button mushrooms, sliced
  • 1 medium Red bell pepper, sliced
  • 2 cups Spinach, fresh
  • 1.5 cups Mozzarella cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Marinara sauce
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes
  • 1 Egg, beaten

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

Step 3

Add the sliced mushrooms and red bell pepper to the skillet, cooking until the mushrooms are browned and the peppers are softened, about 5 minutes.

Step 4

Stir in the spinach and cook until wilted, about 2 minutes. Season the vegetables with salt, black pepper, and red pepper flakes. Remove from heat and set aside.

Step 5

On a lightly floured surface, roll out the pizza dough into a rectangle approximately 12x16 inches.

Step 6

Brush the surface of the dough with the remaining olive oil, then spread the marinara sauce over it, leaving a 1-inch border around the edges.

Step 7

Sprinkle the shredded mozzarella evenly over the sauce, followed by the Parmesan cheese.

Step 8

Evenly distribute the cooked vegetable mixture over the cheese layer.

Step 9

Starting with one of the long edges, carefully roll the dough into a tight log, pinching the seams and ends to seal.

Step 10

Transfer the stromboli to the prepared baking sheet, seam side down. Brush the log with the beaten egg to give it a glossy finish.

Step 11

Using a sharp knife, make small diagonal slits on top of the stromboli. This helps steam escape during baking.

Step 12

Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through.

Step 13

Let it cool for a few minutes before slicing. Serve with extra marinara sauce on the side for dipping.
