Ingredients

  • 4 pieces Whole grain bread slices
  • 8 slices Vegan ham slices
  • 4 slices Cheddar-style vegan cheese slices
  • 2 tablespoons Butter or vegan butter
  • 2 teaspoons Dijon mustard
  • 1 medium Tomato, sliced
  • 1 cup Fresh spinach leaves
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) or a panini press if you have one.

Step 2

Spread a thin layer of butter or vegan butter on one side of each bread slice.

Step 3

Spread a thin layer of Dijon mustard on the non-buttered side of two bread slices.

Step 4

Layer 4 slices of vegan ham on top of each mustard-spread bread slice.

Step 5

Add slices of tomato over the vegan ham, and sprinkle with salt and black pepper to taste.

Step 6

Top with fresh spinach leaves.

Step 7

Place a slice of cheddar-style vegan cheese on top of the spinach.

Step 8

Complete the sandwich by placing the remaining bread slices on top, buttered side out.

Step 9

Place the sandwiches on a baking sheet or directly onto the hot panini press.

Step 10

If using the oven, bake for about 5 minutes, then flip and bake for another 5 minutes, or until the bread is golden and crispy and the cheese is melty. If using a panini press, grill for about 5 minutes or until golden brown and the cheese has melted.

Step 11

Remove from heat, let cool slightly, then slice each sandwich in half.

Step 12

Serve immediately, enjoying the savory flavors of your vegetarian ham and cheese toast.
