Ingredients

  • 2 cans (14 oz each) Hearts of Palm
  • 2 sheets Nori Sheets
  • 2 tablespoons Capers
  • 0.5 cup, finely chopped Red Onion
  • 0.25 cup, finely chopped Dill Pickles
  • 2 tablespoons, finely chopped Flat-leaf Parsley
  • 2 tablespoons, finely chopped Chives
  • 3 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 tablespoon Dijon Mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 1 large, diced Avocado

Directions

Step 1

Drain and rinse the hearts of palm, then pat dry with paper towels. Chop them into small, bite-sized cubes and transfer to a mixing bowl.

Step 2

Use scissors to finely cut the nori sheets into tiny pieces. Add these to the bowl with the hearts of palm.

Step 3

Finely chop the capers, red onion, dill pickles, parsley, and chives, then mix them in with the chopped hearts of palm and nori.

Step 4

In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and black pepper to create the dressing.

Step 5

Pour the dressing over the hearts of palm mixture and gently toss to ensure everything is well coated and combined.

Step 6

Carefully fold in the diced avocado, being gentle to maintain some of the cube shapes.

Step 7

Let the mixture sit for at least 10 minutes to allow the flavors to meld. For a more intense flavor, refrigerate for up to 30 minutes before serving.

Step 8

Serve the vegetarian tartare with toasted bread slices or crackers for a delightful appetizer.
