Ingredients

  • 1 piece English muffin
  • 1 large Egg
  • 1 slice Cheddar cheese
  • 0.5 piece Avocado
  • 1 slice Tomato
  • 1 handful Spinach leaves
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Split the English muffin in half and toast both halves until golden brown.

Step 2

In a non-stick skillet over medium heat, melt the butter.

Step 3

Crack the egg into the skillet and season with salt and pepper. Cook until the white is set, about 2-3 minutes.

Step 4

Flip the egg gently and cook for an additional minute for an over-easy egg. Remove from the heat.

Step 5

While the egg is cooking, slice the avocado half and tomato.

Step 6

Place the spinach leaves on the bottom half of the toasted English muffin.

Step 7

Layer the avocado slices over the spinach.

Step 8

Add the cooked egg on top of the avocado.

Step 9

Place the slice of cheddar cheese on top of the egg, allowing the heat from the egg to slightly melt the cheese.

Step 10

Add the tomato slice and top with the other half of the toasted English muffin.

Step 11

Press down gently and slice the sandwich in half, if desired, before serving.
