  • 1 cup spinach
  • 1 cup cheddar cheese
  • 4 large flour tortillas

  • 0.25 teaspoon black pepper
  • 0.5 teaspoon ground cumin
  • 1 cup salsa
  • 1 medium avocado

Directions

Step 1

Dice the red bell pepper and small yellow onion into small pieces.

Step 2

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper. Cook until softened, about 5 minutes.

Add the black beans to the skillet, along with the ground cumin, salt, and black pepper. Cook for 2-3 minutes until heated through. Remove the mixture from the skillet and set aside.
