Ingredients

  • 4 slices tempeh bacon
  • 2 pieces large eggs
  • 2 tablespoons milk or plant-based milk
  • 1 tablespoon butter or plant-based butter
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup cheddar cheese, shredded
  • 1 piece kaiser roll or your choice of roll
  • 1 tablespoon olive oil

Directions

Step 1

Preheat a skillet over medium heat. Add olive oil to lightly coat the bottom of the skillet.

Add the tempeh bacon slices to the skillet and cook for about 2-3 minutes on each side, or until they are golden brown and crispy. Remove from the skillet and set aside.

In a small bowl, whisk the eggs with the milk, salt, and black pepper until well combined.

Wipe out the skillet and return it to medium heat. Add butter to the skillet and let it melt, covering the bottom evenly.
