Ingredients

  • 200 grams tempeh
  • 2 tablespoons olive oil

  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin powder
  • 0.5 teaspoon salt
  • 400 grams black beans, drained and rinsed
  • 150 grams corn kernels
  • 1 red bell pepper, chopped
  • 1 avocado, sliced
  • 150 grams cherry tomatoes, halved
  • 4 pieces lettuce leaves
  • 4 pieces whole wheat tortillas

Directions

Step 1

Slice the tempeh into thin strips.

Step 2

In a small bowl, mix together olive oil, chopped chipotle peppers, adobo sauce, lime juice, honey, garlic powder, cumin, and salt to create the marinade.

Place the tempeh strips in a shallow dish and pour the marinade over them. Ensure all pieces are well-coated. Let them marinate for at least 15 minutes.
