  • 1 cup Corn kernels
  • 0.5 cup Sour cream
  • 1 tablespoon Lime juice
  • 0.25 cup Cilantro leaves
  • 1 cup Cherry tomatoes
  • 1 whole Avocado
  • 0.5 cup Red onion
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a medium saucepan, combine the brown rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 30 minutes or until the rice is tender and all the water is absorbed. Fluff with a fork and set aside.
