  • 14 ounces Firm tofu, cubed
  • 2 medium Carrots, julienned
  • 3 small heads Bok choy, chopped
  • 8 ounces Shiitake mushrooms, sliced
  • 3 stalks Green onions, sliced
  • 8 ounces Rice noodles
  • 1 tablespoon Sesame oil
  • 0.25 cup Fresh cilantro, chopped
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Begin by preparing all your ingredients. Mince the ginger and garlic, cube the tofu, julienne the carrots, chop the bok choy, slice the mushrooms, and slice the green onions.

In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger and sauté for about 1 minute until fragrant.

Add the vegetable broth and soy sauce to the pot and bring to a boil.
