Ingredients

  • 400 grams firm tofu
  • 120 grams plain yogurt
  • 30 ml olive oil
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 red onion, cut into chunks
  • 1 green bell pepper, cut into squares
  • 200 grams cherry tomatoes
  • 8 wooden skewers

Directions

Step 1

Press the tofu to remove excess moisture by wrapping it in a clean kitchen towel and placing a heavy object on it for at least 15 minutes.

Step 2

Cut the pressed tofu into 2.5 cm cubes.

Step 3

In a bowl, mix together the yogurt, olive oil, lemon juice, minced garlic, paprika, cumin, coriander, cinnamon, salt, and black pepper to create the marinade.

Add the cubed tofu to the marinade and gently mix until all pieces are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

Preheat an outdoor grill or a stovetop grill pan over medium heat.
