Ingredients

  • 500 g Vegetarian chicken strips
  • 60 ml Soy sauce
  • 30 ml Lime juice
  • 2 tbsp Brown sugar
  • 1 tsp Ground coriander
  • 1 tsp Ground cumin
  • 3 Garlic cloves, minced
  • 200 ml Coconut milk
  • 100 g Crunchy peanut butter
  • 2 tsp Red curry paste
  • 1 tsp Sriracha sauce
  • 2 tbsp Vegetable oil
  • 2 tbsp Fresh cilantro, chopped
  • 2 tbsp Chopped roasted peanuts
  • 10 Satay skewers

Directions

Step 1

In a medium bowl, combine soy sauce, lime juice, brown sugar, ground coriander, ground cumin, and minced garlic. Stir well to dissolve the sugar.

Add the vegetarian chicken strips to the marinade, making sure they are evenly coated. Let them marinate for at least 15 minutes.
