  • 14 ounces plant-based chicken substitute
  • 16 ounces fresh spinach
  • 1 medium onion

  • 1 inch piece fresh ginger
  • 1 tomato
  • 1 green chili
  • 0.5 cup coconut milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro leaves

Directions

Step 1

Wash the spinach thoroughly and blanch it in boiling water for 2 minutes. Drain the spinach and immediately transfer to an ice bath. After it cools, drain again and blend into a smooth paste. Set aside.

Step 2

Finely chop the onion, garlic, ginger, and tomato. Slice the green chili.

Step 3

Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and allow them to sizzle for about 30 seconds until fragrant.

Add the chopped onion to the pan and sauté until it turns golden brown, about 5 minutes.
