Ingredients

  • 200 grams Plant-based chicken strips
  • 2 pieces Large whole wheat tortillas

  • 2 tablespoons Pine nuts
  • 1 piece Garlic clove
  • 1/4 cup Extra-virgin olive oil
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 cup Romaine lettuce
  • 10 pieces Cherry tomatoes
  • 1/2 piece Cucumber
  • 1/4 piece Red onion

Directions

Step 1

To make the pesto, combine fresh basil leaves, vegetarian Parmesan cheese, pine nuts, and a garlic clove in a food processor. Pulse until finely chopped.

Add the extra-virgin olive oil, lemon juice, salt, and black pepper to the basil mixture and blend until smooth. Set aside.
