Ingredients

  • 4 pieces plant-based chicken fillets
  • 0.5 cup all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 large eggs
  • 1 cup breadcrumbs
  • 0.5 cup Parmesan cheese
  • 3 tablespoons olive oil
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese
  • 0.25 cup fresh basil leaves
  • 1 teaspoon dried oregano

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a shallow dish, sift together the all-purpose flour, salt, and black pepper.

Step 3

In another shallow dish, beat the eggs until blended.

Step 4

In a third dish, mix together the breadcrumbs and Parmesan cheese.

Step 5

Dredge each plant-based chicken fillet in flour, shaking off excess.

Step 6

Dip the fillets in the beaten eggs, allowing excess to drip off.

Coat the fillets with the breadcrumb and Parmesan mixture, pressing firmly to adhere.

Step 8

Heat olive oil in a large skillet over medium heat.

Step 11

Place the fried fillets on top of the sauce.

Step 12

Spoon remaining marinara sauce over the fillets.

Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.
