Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 0.75 cup water
  • 1 cup vegetarian chicken substitute
  • 1 cup cabbage, finely shredded
  • 0.5 cup carrots, grated
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon coriander powder
  • 0.5 teaspoon black pepper
  • 2 tablespoons scallions, chopped
  • 2 tablespoons cilantro, chopped

Directions

Step 1

In a large bowl, mix the all-purpose flour and 0.5 teaspoon salt. Gradually add water and knead into a smooth dough. Cover and let it rest for 20 minutes.

Step 2

In a pan over medium heat, add the vegetarian chicken substitute, cabbage, carrots, and onions. Cook for 5-7 minutes until slightly soft.

Step 3

Add ginger, garlic, soy sauce, sesame oil, coriander powder, black pepper, and remaining 0.5 teaspoon salt to the pan. Stir well until combined and cook for another 2-3 minutes.

Step 4

Remove the pan from heat and mix in the scallions and cilantro. Allow the filling to cool slightly.

Step 5

Divide the rested dough into small, equal-sized balls. Roll each out into a thin circle, about 3-4 inches in diameter.

Step 6

Place a spoonful of the filling in the center of each rolled-out circle. Fold the edges over the filling and pinch to seal, forming pleats as you go.

Step 7

Prepare a steamer and line it with parchment paper or lightly grease it to prevent sticking.

Step 8

Arrange the momos in the steamer, making sure they do not touch each other.

Step 9

Steam the momos for 10-12 minutes or until the dough becomes soft and translucent.

Step 10

Serve hot with your favorite dipping sauce or chutney.
