Ingredients

  • 8 ounces Vegetarian chicken strips
  • 1 medium Onion
  • 1 medium Red bell pepper
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 12 small Corn tortillas
  • 1 cup Vegetable oil
  • 1 cup Shredded cheese
  • 0.25 cup Cilantro
  • 0.5 cup Sour cream
  • 0.5 cup Salsa

Directions

Step 1

Dice the onion and red bell pepper finely. Mince the garlic cloves.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion, red bell pepper, and garlic. Sauté for 5 minutes until the vegetables are softened.

Step 3

Add the vegetarian chicken strips to the skillet. Stir in the cumin, chili powder, salt, and black pepper. Cook for another 5 minutes until the vegetarian chicken is heated through and well coated with the spices.

Remove the skillet from heat and set aside.

Preheat the oven to 200°F (95°C) and line a baking sheet with paper towels.
