Ingredients

  • 14 oz extra firm tofu
  • 2 tbsp soy sauce
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 cups broccoli florets
  • 1 cup short-grain brown rice
  • 2 cups vegetable broth
  • 0.5 tsp freshly ground black pepper
  • 1.5 cups cheddar cheese, grated
  • 0.5 cup breadcrumbs
  • 2 tbsp unsalted butter, melted

Directions

Step 1

Press the extra firm tofu to remove excess moisture. Cut it into bite-sized pieces.

Step 2

In a large bowl, combine the tofu pieces with soy sauce, 1 tablespoon of olive oil, garlic powder, and onion powder. Marinate for 10 minutes.

Step 3

Preheat your oven to 375°F (190°C).

Step 4

Heat a skillet over medium heat and add 1 tablespoon of olive oil. Sauté the marinated tofu until golden brown on all sides, about 5-7 minutes. Set aside.

In the same skillet, add the remaining tablespoon of olive oil and sauté the broccoli florets until bright green and slightly tender, about 3-4 minutes.
